We are officially on the countdown until Thanksgiving! Only two more days, eek! Are you ready? I mostly am. I am going to be making my delicious and amazingly fresh tasting Cranberry Relish today and beginning a few other prep items today as well. But what happens AFTER Thanksgiving? What do you do with all your leftovers!? Well I have the perfect solution for how to make-over your Thanksgiving Day leftovers into something new and delicious without a lot of work or cost! I am really excited to share my recipe for Turkey and Stuffing Casserole with you!
This is one of those recipes where there is a lot of wiggle room. You can modify this recipe to use the stuffing that you have left over or make another batch of Stove Top stuffing if you prefer, or if you don't have any left over like we typically don't! Either way, this is one of those recipes where you use what you have and make it work! But I am sharing my basic Turkey and Stuffing Casserole recipe with you below for a guide! It is really simple to throw together, feeds a HUGE crowd and tastes amazingly delicious! We are not huge casserole people but we all LOVE this recipe!
I had many of my ingredients that I needed on hand to make my Turkey and Stuffing Casserole, but I made a quick run to Walmart to snag a few items I needed to complete this recipe like Stove Top Stuffing and sour cream!
Turkey and Stuffing Casserole
Ingredients:
- 2 tablespoons Butter
- 3 tablespoons Flour
- ½ cup Chicken Broth
- ½ cup Milk
- ¼ teaspoon Salt
- ¼ teaspoon Pepper
- 16 oz Kraft Sour Cream
- 4-5 cups diced Turkey
- 2 packages Stove Top Stuffing, Turkey flavor (or use your left over stuffing)
Directions:
- Heat oven to 375 degrees F.
- Melt butter in a saucepan over medium heat.
- Stir in flour.
- Whisk until smooth and bubbly.
- Add broth and milk slowly while stirring.
- Whisk until smooth.
- Bring to a simmer and heat until it thickens.
- Add salt and pepper and stir.
- Remove from heat and mix in sour cream until smooth.
- Prepare Stove Top Stuffing according to package directions and set aside.
- Place diced turkey in the bottom of a greased 9 x 13 pan.
- Spread sour cream mixture evenly on top of turkey.
- Add stuffing on top and cover with foil.
- Cook in the oven for about 30 minutes.
- Remove foil and cook an additional 15 minutes until the top of the stuffing is browned and the casserole is bubbly.
- Remove from oven, let sit for a few minute and serve!
This is of course delicious served with a side of left over Cranberry Relish!
Since this Turkey and Stuffing Casserole recipe is made of Thanksgiving leftovers and mostly pantry items, there is not a lot of cost involved in this recipe either which helps you to stress your dollars during this busy holiday season!
