So after dreaming and stewing I came up with an amazing idea for a recipe that blew me out of the water! I created this incredible Baked Chili Dip that takes 7 layer dip to an entirely new level! This is full of flavor, delicious and filling and of course, so incredibly simple to make! So grab a bag of chips and come check out this amazing Baked Chili Dip that will completely rock your world!
A big huge thank you today to Hormel Foods and Evite for making this post possible. All opinions, ideas, recipe and photos are 100% mine.
This dip is thick and rich and I may or may not have eaten about half of this batch tonight, by myself, and called it dinner! Even though it is a "dip" it has all the makings of a delicious meal. Meat, beans, vegetables and dairy! And because it is baked the cheese is melty-cheesy and oh-so-good which takes this dip over the top delicious!
So take a quick trip to the store, grab a pan and a big bag of chips and get ready for a dip that will completely leave your guests wow-ed!
The Best Ever Baked Chili Dip
Ingredients:
- 8 oz cream cheese, softened
- ⅓ green bell pepper
- 1 can Hormel® Chili (with beans or without, your choice, I made mine with beans)
- 2 cups shredded cheese (I used a cheddar and jack blend but you can use your favorite)
- 8 oz guacamole
- 4-8 oz sour cream
- handful of cherry tomatoes
- 1-2 scallions
Cut your pepper into small pieces and mix it into the cream cheese. Spread it onto the bottom of a 8" x 8" pan.
Layer chili onto the cream cheese mixture.
Top with shredded cheese.
Bake at 350 for approximately 15 minutes until cheese is melted and the dip is warm.
Remove the dip from the oven and let sit about 10-15 minutes to cool slightly.
Top with guacamole, sour cream, sliced tomatoes and scallions.
This is best served warm with chips. I particularly like the tortilla scoop chips so that I can get more yummy dip per bite! But any tortilla chip will work!
This dip is thick and delicious and it will impress your family or guests!
It really is an amazing dip that my whole family loved! It takes a traditional 7 layer dip to an entirely new level!

One change you could make:
Put Pico de Gallo on top instead of tomatoes and scallions. More flavor! Or put the sour cream under the guacamole and the pico on top of that. The pico will "seal" the guacamole, which will keep it from turning brown.
Salsa will also work, in a pinch, but I prefer the fresher taste of pico de gallo.

Thanks for the ideas!

Oh--and I can't believe nobody's heard of this recipe before. This was a huge party favorite as far back as the 80s, at least. You couldn't go to a large gathering back then without seeing it somewhere on a party table.
