I love brownies. I can make and eat an entire pan of brownies in a day...they are just one of my favorite desserts ever! But with fall around the corner I have also been excited to begin my season long obsession with pumpkin! So I decided the other day to combine my two loves and I made the most delicious and easy Pumpkin Pie Brownie Bars ever! These are the perfect combination of rich and decadent and the chocolate perfectly offsets the sweet taste of pumpkin pie. These are amazing. And, so incredibly simple to make! I know I will be making them again really soon!
This recipe was actually inspired because I was sent a nice little care package from Miss Jones Baking Co.. I wasn't asked to write a post about them, but then they sent me a box of organic brownie mix and I love brownies, so this idea was born. And these pumpkin pie brownie bars taste so delicious that I couldn't help but share the recipe with you! Miss Jones Baking Co. just launched a line of products in Target though in case you are interested. They make a line of delicious, organic, plant-based baking mixes and frostings and while I can't attest to all of their products, their brownies are rich and delicious!
But this recipe can be made with any brownie mix recipe. I used what I had on hand, and so can you!
You can make this recipe from scratch if you prefer too! If you have a yummy homemade brownie mix, that will work! I choose to begin with a brownie mix from a box though. However the pumpkin was made from scratch using pumpkin puree and spices. If you want to really short-cut this recipe, you can use a box brownie mix AND a can of pumpkin pie mix that is ready to go. It's up to you! But I personally love adding the pumpkin pie spices myself to the pumpkin puree...I just think it tastes better!
And yes, the pumpkin pie part is just a basic recipe for pumpkin pie. So if you prefer to use your own combination of spices you definitely can!
Pumpkin Pie Brownie Bars
Ingredients:
- Brownie Box Mix (use a box mix recipe for a 9x9 pan)
- All ingredients needed to make the brownies per the back of the box
- (1) 15 oz can Pumpkin Puree
- (1) 14 oz can Sweetened Condensed Milk
- 2 Eggs
- 1 teaspoon Cinnamon
- ½ teaspoon Ground Ginger
- ½ teaspoon Nutmeg
- ½ teaspoon Salt
- Whipped Cream if desired for serving
Directions:
- Preheat oven to 350 degrees fahrenheit.
- Prepare brownie mix according to box directions. Pour mix into a greased 9x9 pan. (I greased my pan and placed parchment paper down for easy removal of the bars)
- In a bowl add pumpkin puree, sweetened condensed milk, eggs, cinnamon, ginger, nutmeg and salt. Stir until fully incorporated.
- Pour pumpkin pie mixture on top of brownie mixture.
- Cook at 350 degrees fahrenheit for 45-60 minutes or until the pumpkin pie layer is done. You will know it is done when you can take a sharp, clean knife and cut through it without anything remaining on the knife. There might be a slight wobble left to the top of the pumpkin pie, but it won't be jiggly.
- Let pumpkin pie brownie bars cool completely. Then serve with whipped cream if desired.
This dessert is so rich and decadent! And it really didn't take very long to put together. I will definitely be making this recipe again this fall because it was so so yummy!

Will this work with an 8x8 pan?

This sounds and looks divine. If I wanted to make this in a 9x13 pan would you just double the recipe? Thank you and enjoy the Holidays 😊
Ashley Phipps
You can double the recipe for a larger pan, but it will make this thicker so will require more baking time so be sure to adjust accordingly!
