Don't these look amazing!?!? They look like cookies you would buy at a specialty bakery.
Amazingly, I made them. Seriously. And they were super easy. And super yummy! (my only disclaimer is that you have to allow time for the cookie dough cool before you bake them, so plan ahead!)
Red Velvet Cheesecake Cookies
I have slowly grown to enjoy Red Velvet. But Red Velvet Cookies stuffed with a Cheesecake like filling?!?!

Red Velvet Cheesecake Cookies
(I found the original recipe at Two Peas and Their Pod, but modified it slightly.)
Ingredients for the cookies:
- Red Velvet cake mix box
- 2 Tbs flour
- 2 eggs
- ½ cup veggie or canola oil
- 1.5 teaspoon vanilla extract
- 4 oz cream cheese, softened
- 2 cups powdered sugar
- 1.5 teaspoon vanilla extract
- white chocolate chips
- For the cookies, combine cake mix and flour in a bowl and whisk until clumps disappear.
- In a stand mixer, combine cake mix/flour mixture, eggs, oil and vanilla and mix until smooth.
- Dough will be oily.
- Wrap dough in plastic wrap and refrigerate for at least 2 hours.
- For the cheesecake filling, mix the cream cheese, powdered sugar and vanilla in a stand mixer until smooth.
- Using ½ teaspoon, scoop out cheesecake filling and roll into balls until you have about 20-22. Place on a plate and put in the freezer for at least 2 hours.
- Preheat oven to 350 degrees and line cookie sheets with parchment paper.
- Take ⅛ cup cookie dough and flatten in your hands.
- Place a filling ball on the dough and gently wrap dough around the filling. Roll into a ball carefully.
- Place 4 cookies on a cookie sheet (these make large cookies) and bake for 11-13 minutes. Cookie will begin to crackle when they are done.
- Let cookies cool on baking sheet for a while then transfer to a cooling rack to cool completely.
- Melt white chocolate chips and drizzle on cookies.
- Let chocolate set and enjoy!
This recipe makes about 20 cookies.
