Knock-Your-Socks-Off Apple Dumplings

My husband LOVES apple desserts.  He loves apple pie, he loves apple crisp, he loves apple turnovers...you get the idea.  He loves apple desserts.

But most apple desserts take a lot of TIME, MONEY and PATIENCE.  And let's be honest here, it is hard to peel, core, slice and dice 16 apples while my two year old son is running around the house trying to climb on things and jump off things and take all the DVD's out of their cases...yeah...apple desserts just don't happen in my home!

And while this post may be more suited for a Fall post, I couldn't help but share this amazing recipe because it is SIMPLE, AFFORDABLE, QUICK and AMAZINGLY DELICIOUS!!

With how simple and inexpensive this is, you don't need to wait until fall to enjoy this dessert!  You can make and enjoy these any night!

And guess what, this recipe makes 16 dumplings and it only takes 4 apples.  Yes.  I said 4 apples!!!

I already had all my pantry items already, the apples cost me about $2 and the biscuits were also $2!  So I was able to make 16 dumplings for $4!!  At 25 cents a dumpling, that is the cheapest apple dessert I have ever made!

And, the best part is that they got RAVE reviews from my husband and our guests!

Big THANKS to my mom who found this recipe and modified it to turn it into what it is...an amazing, simple, inexpensive, delicious dessert!

| Knock-Your-Socks-Off Apple Dumplings | 7 |
Knock-Your-Socks-Off Apple Dumplings
Yields: 16 dumplings
Modified from Trisha Yearwood’s recipe here. 


Ingredients:
            4 granny smith apples
            1 cup water
            1 cup white sugar (divided*)
            ½ cup (1 stick) butter
            ¼ teaspoon vanilla extract
            8 canned Pillsbury Grands Flakey Biscuits
            4 teaspoon ground cinnamon
  
Directions:
1.    Preheat oven to 375 degrees F
2.    Peel, core and slice apples into 4 pieces
3.    Separate each biscuit into 2 layers
4.    Wrap a biscuit layer around each apple slice, overlapping and sealing on the bottom
5.    Place all (16) wrapped dumplings in a greased 9x13 pan
6.    In medium saucepan, bring water, ¾ cup sugar, butter and vanilla to a boil over medium heat
7.     Pour hot sugar mixture over dumplings (it will look very soupy)
8.     Mix remaining ¼ cup sugar* with Cinnamon and sprinkle on tops of dumplings
9.     Bake for 35 minutes or until golden brown
10.    Serve with vanilla ice cream, whipped cream or in cream / milk

*For a richer flavor, use brown sugar instead of white sugar to sprinkle on top of dumplings

      I have never tried freezing these, but I imagine you could! I'd love to know if you freeze them, how they turn out!
