Frozen Raspberry Lemonade Pie

Ok.  Well, it doesn't look pretty.  This pie will never win an award for looks (my crumby camera doesn't help the cause either).  BUT.  It is so yummy! 

My husband has been known to almost single handedly finish off an entire one of these pies.  Seriously.  It is that yummy.

I brought this to a friend's house for Easter dinner and it was a huge hit! 

And it is a perfect Spring pie as well! 

And did I mention it is super easy too!?!

What is it you ask? 

A Frozen Raspberry Lemonade Pie!  (Yum!)

Here is the how-to:

Graham Cracker Crust
1 package graham crackers, minus 2 crackers
3-5 T melted margarine
3 T sugar

Melt margarine in pie pan.
Crush graham crackers in ziplock bag using a rolling pin.
Add sugar to bag and mix.  Pour into pan.  Mix together with a fork.
Pat into pie crust.
Bake 5 minutes at 400 degrees. 
Let cool completely.

Filling
8 oz cool whip, thawed
12 oz frozen raspberry lemonade concentrate, thawed
14 oz sweetened condensed  milk
1 teaspoon lemon extract

Stir together lemonade, sweetened condensed milk and extract.
Fold in cool whip.
Pour into cooled graham cracker crust.
Freeze overnight.
(You might want to set it out 10-20 minutes prior to serving)

Variation:  add fresh or frozen raspberries to the filling mixture prior to freezing.  Extra yum.

Try not to eat it all in one sitting.  It is soooo yummy!
