With a new baby and two school-age kids, my after school hours are insane. I am running one child here and another one there while trying to keep a baby on a schedule. Somewhere in there I need to fix my family dinner. I want to give my family a healthy, delicious dinner but I also need something quick and on a budget. So today I am excited to share a really yummy, quick and easy recipe that I love to throw together. Sometimes I plan to make this during the week, and other times I just use what I have in my fridge to create this meal at the last minute. Today I am sharing my secrets for this Healthy Quinoa and Vegetable Chicken Bowl.
Because I am a busy mom who also works from home, I have to do my best to consolidate as much as I can and one of the ways I save time is by shopping at a store where I can buy everything with one stop. Recently I went to Market District and was amazed that I was able to find everything I needed and I got in and out of there plus I saved money!

I snagged a few groceries that I needed to make my yummy quinoa and vegetable chicken bowl the other day and here is what I saved:
One of my most favorite tricks to saving time during that busy time of day, is to ask the meat department to cut my meat for me. Did you know, they will do that!? I knew I would need my meat cut like for a stir fry, so instead of doing it at home, I asked the meat department if they could do it while I waited. It made meal prep so much easier and faster. Here is my simple recipe for my healthy quinoa and vegetable chicken bowl:
Healthy Quinoa and Vegetable Chicken Bowl
Ingredients:
- 1 cup Quinoa
- 2 cups Chicken Broth (optional)
- 1 lb. Chicken, cut
- Broccoli florets (I buy prepackaged and pre-cut in the produce department to save time)
- (2) Yellow Squash
- (1) package Carrots, pre-sliced
- (1) package Grape Tomatoes
- 1 Tbs Monterey Seasoning
- 2-3 Tbs Extra Virgin Olive Oil
Directions:
- Make quinoa according to package directions. I like to make mine with chicken broth instead of water for extra flavor.
- Mix chicken and vegetables with olive oil and monterey seasoning.
- Cover a cookie sheet with foil and cooking spray, then spread chicken and vegetables on the cookie sheet.
- Cook for about 30-40 minutes at 400 degrees until chicken has reached 165 degrees.
- Serve chicken and vegetables over quinoa.
Enjoy a healthy and easy dinner!
