Happy Earth Day!

For Earth Day I decided to make blue and green "Earth" cupcakes for my daughter's school (I saw this idea here).

But.  I didn't want to bring in actual sugary cupcakes.

So I made cornbread cupcakes instead!

And of course, to make my life simple, I used fool-proof Jiffy corn bread mix! 

I used 2 boxes and mixed them in seperate bowls.  Colored one bowl green and one bowl blue.  Then carefully spooned the blue and green mix into cupcake tins alternating colors.

Bake according to directions.

And voila!  "Earth Cupcakes"!
