The best part of this recipe is that it is ridiculously simple and devilishly delicious! And you only need a few ingredients and a few minutes to make it all come together! Yum!
Pumpkin Love Cake
Ingredients:
- 1 large can (30 oz) easy Pumpkin Pie Mix (or similar)
- ⅔ c evaporated milk
- 2 eggs, beaten
- 1 box yellow cake mix
- 1 stick butter, softened
Directions:
- Mix pumpkin pie mix, evaporated milk and eggs until well incorporated.
- Pour in a greased 9x13 pan.
- In a separate bowl, combine butter and cake mix using a fork, pastry knife or your hands. There should be no cake "powder" left, it should all be combined into small balls of yummy-ness.
- Gently drop cake and butter mixture on top of pumpkin mixture.
- Bake at 350 until the top starts to brown.
- Let cool and enjoy. This is particularly yummy topped with whipped cream or with vanilla ice cream on the side.
I love how this recipe comes together so quickly. But it tastes amazing! It is delicious like a pumpkin pie without nearly the work!
I have thought about making this instead of pumpkin pie for Thanksgiving....think my family would go for it!?
And I love how the crispy topping contrasts against the delicious creamy pumpkin filling!
I plan to make this this weekend again because it is simply one of my favorite recipes!
I hate to admit it but I can eat most of a pan myself it is sooooo good! I try not to do that...but...if left unattended I just might.
