I love homemade Chicken Pot Pie but it always makes such a huge amount of food for my little family of four. So it is actually a favorite recipe of mine to use for entertaining. It is a simple dish to make but it goes such a long way and it is the perfect recipe for any time of year! Today I am sharing my favorite Easy Homemade Chicken Pot Pie Recipe along with a few Entertaining Tips that will help make entertaining a cinch.
While holiday entertaining is my favorite and this is perfect for all your holiday entertaining needs, you can apply the same tips (and recipes) to entertaining all year long!

Plan Your Menu
Planning your menu well in advance is so helpful when entertaining. I love to come up with a dessert that I can make early, side dishes that don't need to be cooked, and an easy main dish that is amazingly savory and delicious! This combination never fails to please a crowd!
For this particular dinner party, I made a yummy side salad and then served strawberries with dip on the side as well. These are two healthy side dishes that do not take a lot of time to prepare and are always a hit.
For dessert I picked a family favorite! I love my Simple Cherry Crisp Recipe for dessert any time of year! But it is perfect during the holidays too! This recipe only takes about 10 minutes to throw together and about another 30 to bake. And you can easily bake this the day before or the morning of so it won't take precious oven space when you are trying to make your main dish. It is also something you could put together ahead of time and bake while everyone is eating the main course so that you can serve it warm. Either way, this is quick to put together and is always perfect for a crowd!

And my Chicken Pot Pie Recipe...it's to-die-for! It also feeds a small army. Seriously. This recipe fed 4 adults and 8 hungry young children just the other day. I am sure it would easily feed 8 adults. So it is the perfect dish when you are entertaining because it is filling, delicious and feeds a crowd.
Homemade Chicken Pot Pie Recipe
Ingredients:
- ½ cup Butter
- ½ cup Flour
- (2) 14 oz cans of Chicken Broth
- ½ teaspoon Thyme
- ¼ teaspoon Garlic Powder
- 1 teaspoon Salt
- ½ teaspoon Ground Pepper
- 1 ½ cup Milk
- 3 cups Chicken Breast, cooked and diced
- 12 oz Frozen Mixed Vegetables
- ⅓ cup Onion, chopped
- 2 containers of 10, Pillsbury Grands Junior Golden Layers Flaky Biscuits
Directions:
- Mix butter and flour over medium heat on stove and whisk until combined.
- Cook for about 5 minutes until it is golden brown.
- Add chicken broth, thyme, garlic powder, salt and pepper.
- Stir until thick.
- Remove from heat.
- Add milk, chicken, vegetables and onion and mix.
- Pour mixture into a 9" x 13" casserole dish.
- Place biscuits on top of mixture.
- Bake at 450 degrees fahrenheit for 30-40 minutes or until heated throughout and biscuits are cooked and golden.
Doesn't it look amazing!? It tastes amazing too!
If you happen to have left over turkey from Thanksgiving or Christmas, substitute chopped up turkey for chicken! It is a great way to use leftovers and will make preparing this dish even easier!

Spruce Up Your Home
I love sprucing up my home before guests arrive. Whether you just need to do a deep clean or you want to change a few things in your home, a little time spent on your home will make entertaining guests more fun for you! But don't try to do big remodels during the holiday season. I love buying dishes that do double duty. If I begin with pretty baking dishes like these beautiful Rachel Ray Stoneware dishes from hayneedle.com, I can easily go from the oven to the table. They look beautiful and cook amazingly. Have you cooked with stoneware dishes? They are fantastic!
Also, don't be afraid to use your dishes for non-traditional purposes. Even though my new stoneware dishes are for baking, they also are a beautiful way to hold a salad, fruit or any other dishes you can think of. These are my favorite new dishes and I love that they are so versatile.
