One of the dishes on the menu that immediately caught my eye was a Spinach Alfredo Ravioli with Tomato-Herb Bread Salad meal. Yum! It looked simple and tasty and didn't take a lot of prep time! So I couldn't wait to try it out!
Spinach Alfredo Ravioli
Ingredients
- (1) 10 oz package frozen chopped Spinach, thawed
- (2) 16 oz jars Alfredo sauce
- (1) 25 oz package frozen cheese Ravioli
Directions
- Press spinach between paper towels to drain.
- Spread 1 jar of Alfredo sauce in bottom of a 5-7 qt slow cooker.
- Layer Ravioli and spinach over sauce.
- Spread remaining jar of Alfredo sauce over spinach.
- Add 1 cup water over sauce.
- Cover and cook on Low for 4-5 hours
Tomato-Herb Bread Salad
Ingredients
- 3 cups French bread cubes
- 6 Tbs olive oil, divided
- 1 teaspoon salt, divided
- 1 teaspoon pepper, divided
- 1 pint cherry tomatoes, cut in half
- 3 Tbs balsamic vinegar
- ¼ cup chopped fresh basil
- ¼ cup chopped fresh parsley
To be honest, I did a few things differently. I halved the ravioli recipe because I knew that would be way too much food for my family. And instead of fresh herbs, I used dried.
And honestly, this meal was an absolute HIT with my family! My daughter was begging for seconds and my husband went back for at least thirds! The whole crock pot was empty before I knew it! Whoa...that almost never happens! It was a big success and my husband told me multiple times that he really liked it! Wahoo!
And we liked the Tomato-Herb Bread Salad as well! The olive oil and balsamic vinegar dressing was just perfect for the toasted bread cubes and tomatoes! Yum yum yum!
And I am excited to continue to try out eMeals! So far we have liked their recipes and my recipe collection is growing!
