Sheet Pan Chicken Fajitas
Fajitas are so fun for the whole family because they are easy to customize and every family member can pick and choose what they want on their own fajitas.
So while I think these chicken fajitas are perfect with my exact recipe, my kids opt out of putting any peppers or onions on their fajitas.
And because I don't believe in making separate meals for my kids, but I do want my children to eat, this is the perfect compromise where they can pick to put exactly what they want on their tortilla.
How do you keep fajitas warm for a party?
This sheet pan recipe is perfect to serve at a party because you can easily prep it ahead, and then put it in the oven to pull out exactly when you want to eat it.
But if you still need to keep it warm, I would wrap the pan with foil and put it back in the turned-off oven.

How do you cut chicken fajitas?
I prefer to ask the meat department at my local grocery store to cut my chicken breasts for me! They often will do it while I wait for no charge! Woot woot!
But if I forget to do that, or the line is too long, I will take a sharp knife or scissors and simply cut thin slices across the grain of the chicken.

I love this sheet pan chicken fajitas recipe because it is simple and there is very little cleanup!
I have made this countless times in my oven at home.
But since I am currently living in an RV without an oven (read about it here), I started researching toaster ovens so that I could continue to cook the recipes I love even in our modified living situation.

Sheet Pan Fajita
Ingredients:
- 2 Chicken Breasts, sliced
- 2 Bell Peppers, sliced
- ½ Onion, sliced
- ½ Fresh Pineapple, cut
- 1 Tablespoon Extra Virgin Olive Oil (or oil of your choice)
- 1 ½ teaspoons Chili Powder
- ½ teaspoon Paprika
- ¼ teaspoon Onion Powder
- ¼ teaspoon Garlic Powder
- 1 teaspoon Cumin
- ½ teaspoon Oregano
- ½ teaspoon Sugar
- ¼ teaspoon Salt
- A pinch Cayenne Pepper (about ⅛ teaspoon)
- A pinch Black Pepper (about ⅛ teaspoon)
Directions:
- Preheat oven to 425 degrees Fahrenheit.
- Cover a cookie sheet with foil and spray with non-stick cooking spray.
- Begin your dinner prep by cutting up the chicken, peppers, onion, and pineapple.
- Mix all spices together in a small bowl.
- In a Ziploc bag, or in a large dish, combine chicken, peppers, onions, pineapple, olive oil, and spice mix. Shake or stir until thoroughly combined.
- Spread evenly on the foil-lined baking sheet.
- Bake for 30-40 minutes or until cooked to preference.
