Herb Crusted No-Knead Artisan Bread Recipe
So. Let's talk bread. Not just any bread. Yummy, homemade (or really good bakery) bread! The fresher the better!
But I have a confession to make. I am really not that good at making most bread. And because making homemade bread typically is so labor-intensive, it is really disheartening to make a loaf of bread only for it to not turn out well.
So I generally have stayed away from baking bread, until I learned about delicious no-knead artisan bread! And then my life forever changed!
Not only do these types of bread require no-kneading (as the name implies) but they also don't require weird ingredients, expensive mixers or much time at all! This is as close to a hands-off bread you can get, but the results are still amazing!
Once you try my Herb Crusted No-Knead Artisan Bread your life will be changed and even if you have never successfully made bread before, you will love making it now! The best part about this bread is that it only takes about 10 minutes of hands-on time. Seriously. 10 minutes.
And anyone can make it. So keep reading for the recipe and to learn my tips and tricks to making this bread fantastic!
The best part about my no-knead artisan bread recipe is that you do not have to sit around home, kneading your bread and letting it rise, and kneading and letting it rise...you (literally) mix a few ingredients up the evening before. Then about 2 hours before you want to eat it, stir in a bit more flour, let it sit and then bake it.
There is NO KNEADING, NO mixer needed, NO fancy equipment required, NO hard-to-find ingredients, and it turns out just like fancy bread you would get at an expensive restaurant!
This is the perfect bread to make if you want homemade bread but work out of the home because it isn't labor-intensive and you don't need to be home all day to make it. It is also the perfect bread to make if you have little children, like to be gone a lot, or frankly just forget about the bread you started and don't want to risk ruining another loaf (that's me!).
Also, it is a delicious bread that is full of flavor, crispy on the outside and soft on the inside. It is amazingly yummy.
Today I was excited because as I am still getting used to my brand new remodeled kitchen (see the details HERE and HERE) I realized that I haven't baked bread in my new oven yet! I have baked two cakes; an Angel Food Cake and a Chocolate Bundt Cake with Salted Caramel Sauce. And I have baked casseroles like my Baked Ziti recipe HERE. And I will honestly say that everything turned out better then in my previous electric oven. Everything baked more evenly and just turned out better! So I was really excited to try my Herb Crusted No-Knead Artisan Bread in my new oven too!

My Herb Crusted No-Knead Artisan Bread Recipe that I am sharing today was made using my new Frigidaire Professional Freestanding Range by cooking it in the oven. Everything I have cooked in my new gas oven cooks so evenly and the outside never gets done too quickly. And this no-knead artisan bread recipe was no different. This homemade bread turned out just perfect! With a crunchy outside and a soft inside! Yum yum yum! Perfect!

Herb Crusted No-Knead Artisan Bread
Ingredients:
- 3 cups White Flour, plus more
- 1 ½ teaspoon Salt
- 1 ½ teaspoon Instant Yeast
- 1 Tablespoon Sugar
- 1 ½ Tablespoon Extra Virgin Olive Oil
- ½ teaspoon Rosemary, plus more if desired
- ½ teaspoon Basil, plus more if desired
- 1 teaspoon Oregano, plus more if desired
- 1 ½ cups Water
- ¾ cup shredded Parmesan Cheese, plus more if desired
Directions:
- The night before, combine flour, salt, yeast and sugar in a stainless steel bowl with a spatula.
- Add oil, rosemary, basil and oregano.
- Add water and use a spatula to mix until well combined.
- Put a lid on the bowl (or plastic wrap) and let it sit on your counter for 12-18 hours.
- Put flour on a pastry mat, silicone mat or your counter. Dump the dough onto the mat with a wooden spatula. The dough will be very wet.
- Add more flour to the dough and gently stir with the spatula until the "wetness" is gone. This could take up to a couple of cups of flour depending on many factors, so just add a little at a time until it is no longer wet and too sticky.
- Add cheese and combine.
- Shape dough to the size and shape you want it to be and according to what you are placing your dough to bake in. I use a ceramic covered baking dish and I line it with parchment paper. You will want something with a lid, but you can use whatever you have on hand. (A dutch oven or even a cast iron dutch oven will also work for this.)
- Place dough into the bottom of your baker, put a lid on it and place it in your oven (OVEN SHOULD BE OFF) for approximately 1 ½ hours.
- Remove dough from oven and preheat oven to 425 degrees.
- If you like, sprinkle additional cheese and spices on top of the bread at this time.
- Put baker with lid on into the oven for 30 minutes.
- Take lid off and cook bread for an additional 10-15 minutes or until golden brown.
That's it! No kneading, just a little stirring. And very little hands-on time! And this bread is definitely restaurant worthy it is so delicious!

Bread I don't need a mixer for?! Heck yes! I don't have a fancy mixer or anything, and so many bread recipes suggest having something like that, which is just depressing (a couple hundred dollars to make bread that's only slightly cheaper than the store stuff?
