With the holidays coming to a close, and having just cooked two huge and scrumptious holiday meals within the last two months, I need to take a break and regroup! I am working on getting organized, working on coming up with a meal plan and working on just trying to work smarter this year!
During the rush of the season and with the cold weather, our family has truly enjoyed eating yummy homemade soup whenever we get the chance! And I have recently created a delicious Broccoli and Cheese Soup that is amazing and so super simple to make!
Broccoli Cheese Soup
Ingredients
1 ¾ - 2 cups chicken broth (Pacific Foods Organic Chicken Stock is a great one!)
½ small onion, diced finely
⅓ cup flour
4 Tbs butter
½ teaspoon pepper
½ teaspoon salt
2 cups milk
2 cups shredded sharp cheddar cheese
½ cup shredded swiss cheese
2 - 3 cups (approx) chopped broccoli, lightly steamed
1-2 cups shredded carrots, lightly steamed
Note: I like to have about 4 cups of vegetables total
Directions
- In a small covered pan, simmer chicken broth and onion for about 15-20 minutes until onions are soft.
- Lightly steam broccoli and carrots.
- In separate large pot, melt butter and then add flour, salt and pepper. Cook together, stirring constantly, for about 1-2 minutes.
- Heat milk in microwave for 2 minutes.
- Add heated milk into large pot and mix with the flour mixture until well combined. Whisk and heat over medium heat until soup starts to thicken (about 6-8 minutes.)
- Add chicken broth mixture to the flour mixture and whisk until well blended.
- Add cheese and stir until completely melted.
- Add steamed vegetables and stir until combined.
- Remove from heat and serve immediately.
Serve with bread or rolls.
So when I haven't been busy cooking for holiday meals, I have been busy cooking simple and quick yet fulfilling meals for my family! And this soup is cooked often in my home because everyone (even the kiddos) love it!
